There's still time to wrap up something special for your Valentine's Day sweetie.
♥ Snickerdoodle Cookies♥
1 cup shortening (part butter) or 2 cubes margarine, softened
1 1/2 cups white granulated sugar
2 eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon soda
1/4 teaspoon salt
2 tablespoons white granulated sugar
2 teaspoons cinnamon
Preheat oven to 400 degrees. Cream together shortening, sugar and eggs. Measure flour into a medium-large bowl, add cream of tartar, soda and salt and fluff together with a large whisk. Combine creamed and flour mixtures; mix well. Combine 2 tablespoons sugar and 2 teaspoons cinnamon; set aside.
Form dough into balls a bit larger than a walnut; roll in sugar cinnamon mixture. Place about 2-inches apart on an un-greased baking sheet. Bake 9 to 12 minutes.
Yield: 4 to 6 dozen cookies
Cooks Note: Give your Snickerdoodles a "heart day" pick-me-up by drizzling them with zigzags of white and red frosting. Or, make a Snickerdoodle Sandwich by filling two cookies (bottoms together) with your favorite frosting (chocolate frosting would be a delicious blend with the cinnamon that's already on the cookie). Yum, think I'll go eat one right now!
